Sweet potato fries from the air fryer hit the perfect balance: caramelized edges, tender centers, and a smoky-sweet seasoning that makes them addictive. A light cornstarch toss is the trick that gets them crispier than oven-baked, with barely any oil.

Cut the sweet potatoes into even 1/4-inch (6 mm) sticks.

Toss the fries with cornstarch until lightly dusted — this is what makes them crisp.

Preheat the air fryer to 380°F (193°C). Cook in a single layer (in batches) for 12–15 minutes, shaking halfway, until the edges are browned and crisp.

Notes & Tips
Sweet potatoes never get quite as rigid as russet fries — expect crispy edges with tender middles. Overcrowding is the #1 mistake; give them room and they'll caramelize beautifully.
